Mixed Berry Compote & Meringue Dessert | Cate Renée

*Warning!* A super easy, sugary, and delicious dessert is about the take over whatever thought you were currently having! It's hard to believe that almost three years ago, that'd make me 14, I whipped this little baby out of my back pocket. I love this dessert, especially in the winter time- although summer is rapidly arriving! Super easy and only a few ingredients go into the making of it. 

BERRY COMPOTE

Take a selection on mixed berries, both frozen and fresh, and heat over the stove with a little icing sugar and drop of water. Stir occasionally, until majority of the berries have reduced into a thick sauce. I make sure to leave a few of the blueberries whole still. Pour into little oven dishes or one dish together.

MERINGUE

Just your average stock standard egg whites- I used 1 egg white per person- and tablespoon of icing sugar. Whip until they form soft peaks, and then dollop over the top of the hot compote. Set in oven at 180°C for about five minutes or until top of meringue is lightly golden. And to top it all off a light dusting of icing sugar.

You won't be able to get your hands off these, I promise! Plus the compote taste scrumptious poured over vanilla ice cream or with a slice of pie!
